Unbenowst to many, Tuscany has a rich history and heritage in the art of beekeeping and making honey. The famous Il miele della Toscana (Tuscan honey) is very fragrant and can be found in a variety of flavors, including the flower-based Miele millefiori, chestnut Miele di castagno and are perfect for breakfast, or to accompany beautifully aged pecorino cheese.
Here at Villa Campestri olive oil resort, we also now are happy to be in the ring of homegrown organic honey-makers in the Mugello valley, for a better, more intimate 0km culinary experience. You can read about our first honey harvest last August here and this year is slated to be every better, we are now offering an introduction to beekeeping for those who are curious to see how honey is actually made – with an expert of course! Just last week our beekeeper started the honey-making process, and set up the hives in a beautiful location on our property. We brought Cosimo with us to watch the first step in the organic honey production and we were lucky to have gorgeous weather while setting up our honey-bee boxes.
Now that the first step was made, we can’t wait to embark on what we are sure will be a wonderful harvest in 2014. This honey will be sold in our resort and of course be used in our okm kitchen, spread over a slat of butter on freshly baked bread or mixed with organic plain yogurt – the possibilities for using the honey are endless for those who have a sweet tooth. Living with the land is something that is very important to us, which is why are so excited to share this ‘first step’ with you all.
