Getting nosy with truffles in Tuscany

The art of Truffling’ – discovering nature’s finest gifts in the earth of the land. Truffles are famous – Romans hailed them for their aphrodisiac qualities, and they can be found in many mountainous areas of Italy and are used in haute cuisine and innovative kitchens the world over. The rare and expensive white truffle can cost from 600 to over a 1,000 euros per pound. At Villa Campestri – the first olive oil resort in Tuscany, we offer our guests the opportunity to go ‘tartufo’ hunting with a truffle expert and his dog.

Truffles are a finicky funghi and only grows under certain conditions and in certain environments, it is often said that a truffle chooses the tree to grow below, not the other way around.

Some fun facts about Truffles include

  • Almost all truffle oil is not made with real truffles but rather is a synthetic product created in a lab to recreate the truffle ‘aroma’. Real truffle oil does exist, but it is rare and very expensive.
  • Almost any dog can be a truffle dog. While in Tuscany you normally see the Lagotta Romagnolo as the type of dog used to find truffles, even a mutt can be just as good! 
  • Truffles are served best using simple, fatty dishes. While well known for being an extremely fancy addition to any cuisine, the best way to truly experience the power and flavor of truffles are by shaving it on top of a dish of scrambled eggs or any simple, fatty dish (like linguini al tartufo). This way the truffle remains the protaginist of the plate. 
Around our land in the Mugello area of Tuscany, in the winter and during the spring the “bianchetto” or “marzolino” truffle types can be found under our surrounding oak trees while during the summer the black truffle “scorzone” is harvested from June to November.
