The specialties of Villa Campestri: Cheesecake with oil base and warm pear sauce

Here we come to the appointment of the recipe of the month for Villa Campestri Olive Oil Resort: this time the choice of our chef Roberto Zanieri fell on the “Cheesecake with boil base and warm pear sauce“:

Ingredients:

For the base of the pastry: 400 grams of flour 00; 20 ml oil; 120 gr sugar; 1 cup water; lemon peel

For the filling: 400 g ricotta or Philadelphia; 2 eggs; lemon peel; 100 ml liquid cream; 100 g sugar

Procedure:

For the pastry: bake for 20 minutes at 180 degrees

For the filling: combine the cream cheese and sugar with the yolks of eggs, then add the lemon peel and the egg whites and whip. Put this mixture on the base and bake for another 15-20 minutes at 180 degrees. Once baked, screen by a warm pear sauce.
